Sweet Rice
Originally from Homemade concoction
A nice light fruit & rice salad topper. Once the rice is cooked, it takes about 10 minutes to prepare. Great side salad when serving fish or chicken.
Makes 5-6 servings

Cooking time: 45 minutes
Total time: 55 minutes
Ingredients
- 1 cup rice (you can also mix in brown or wild rice as well)
- 1 pear (leave on the skin for extra fiber)
- 1 apple (leave on the skin for extra fiber)
- 1/4 cup of chopped walnuts
- 1/3 cup dried cranberries
- 2 ounces blue cheese, crumbled
- 8 cups mesclun greens or baby spinach
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
Instructions
- In a bowl, toss together the first 6 ingredients. Season with salt and pepper to taste. In a separate bowl, season the greens with olive oil and red wine vinegar, and toss to coat evenly. Divide the greens on serving plates and top with a scoop of the rice mixture.
