Salsa Rojo con Maize

This is some tasty salsa I made up off the top of my head last night. Also know as "Red Salsa with Corn" or "Corn and Tomato Salsa".

Makes 5-6 Cups

Prep time: 15 minutes
Cooking time: 15 minutes
Total time: 30 minutes

Ingredients

  • 2 Large Tomatoes
  • 1 Cup Corn
  • 1/2 Large Onion
  • 1/2 Lime
  • 1 Medium Jalepeño pepper
  • 2 Cloves Garlic
  • 1 Cup Cilantro
  • 2 tsp White Vinegar
  • 4 tbsp Tomato Sauce
  • 2 tsp Chili Powder
  • 1 pinch Cumin

Instructions

  1. Dice tomatoes, onion, pepper, garlic and cilantro.
  2. Combine all recently chopped veggies
  3. Add vinegar and tomato paste
  4. Stir vigorously
  5. Add spices to taste
  6. Cool in refrigerator for 15 min prior to serving
  7. Enjoy!
