Salsa Rojo con Maize
This is some tasty salsa I made up off the top of my head last night. Also know as "Red Salsa with Corn" or "Corn and Tomato Salsa".
Makes 5-6 Cups

Cooking time: 15 minutes
Total time: 30 minutes
Ingredients
- 2 Large Tomatoes
- 1 Cup Corn
- 1/2 Large Onion
- 1/2 Lime
- 1 Medium Jalepeño pepper
- 2 Cloves Garlic
- 1 Cup Cilantro
- 2 tsp White Vinegar
- 4 tbsp Tomato Sauce
- 2 tsp Chili Powder
- 1 pinch Cumin
Instructions
- Dice tomatoes, onion, pepper, garlic and cilantro.
- Combine all recently chopped veggies
- Add vinegar and tomato paste
- Stir vigorously
- Add spices to taste
- Cool in refrigerator for 15 min prior to serving
- Enjoy!
