Chinese Crunch Salad

Ingredients

  • Salad:
  • 2 heads Napa/Chinese Cabbage
  • 3-4 pkgs ramen noodles, discard seasoning packets
  • 1 bunch scallions
  • 2/3 c. slivered almonds
  • 1 jar sesame seeds
  • 1 stick real butter
  • Dressing:
  • 2 tsp. soy sauce
  • 1 c. white sugar
  • 1/2 c. red wine vinigar
  • 1 c. evoo
  • Mix well and store in mason jar

Instructions

  1. Salad:
  2. Piece uncooked noodles in a plastic bag and crush slightly.
  3. Brown in a non-stick skillet with the stick of butter. Stir constantly to prevent burning.
  4. Add almonds toward the end and the sesame seeds at the very end.
  5. Brown and set aside on paper towels.
  6. Cut the cabbage into ribbons and toss with diced scallions.
  7. Combine dressing ingredients and toss salad. Serve immediately.
