Chinese Crunch Salad

Ingredients
- Salad:
- 2 heads Napa/Chinese Cabbage
- 3-4 pkgs ramen noodles, discard seasoning packets
- 1 bunch scallions
- 2/3 c. slivered almonds
- 1 jar sesame seeds
- 1 stick real butter
- Dressing:
- 2 tsp. soy sauce
- 1 c. white sugar
- 1/2 c. red wine vinigar
- 1 c. evoo
- Mix well and store in mason jar
Instructions
- Salad:
- Piece uncooked noodles in a plastic bag and crush slightly.
- Brown in a non-stick skillet with the stick of butter. Stir constantly to prevent burning.
- Add almonds toward the end and the sesame seeds at the very end.
- Brown and set aside on paper towels.
- Cut the cabbage into ribbons and toss with diced scallions.
- Combine dressing ingredients and toss salad. Serve immediately.
